To elaborate on Slaw's comment:
If you know anything about keys, you know that a model called 'Sab' in one model being moved this way in a key is going to move the exact same way as a different model of the same name in the same key. Thus, by using a point of origin along the length of the blade, and always keeping that facing in the oposing direction of the swing, then switching models via cog in mid swing, you can switch to a fan-blade model, thus making the blade expand out as in the movies.
That's the detailed version, but it's even simpler than that: Copy the fanblade files from the SBX mod and insert them into your own: Insta-fanblades. If you want to use them with the JK swings, or you want to make your own swings, simply open up the main JK Saber model guide and key with that, always keeping the point sticking out of one side facing away from the player. If you can't find a guide model, just make your own by grabbing one edges vertices along the length of the blade in JED and drag them a good distance away from the source of the blade. This will create your point that faces away from the direction the blade is traveling in your keys. When in the game, the normal glowsaber saber will be used, but because we kept one side facing the same way at all times, it'll fan out propperly.
None of that probably made any sense, and you're most likelly more confused than before. You're welcome.
