If I have (keeping it simple) a cube with loads of cleaves through it. Can I make one of the surfaces become a complete square again without stitching?

you can't merge surfaces from different sectors. if you have a cube that you've cut up a lot and you want one side to appear as though it's all one surface, it's better to have it that way before you cleave it, otherwise the only thing i can think of to do is plain ol' stitching.
