There's always LEC's newest: Secret Weapons over Normandy. It's even less Simmy than Crimson Skies. Judging from the demo, your plane feels like it's practically a dirigible with a powerful engine strapped on: very hard to stall, very easy to climb almost vertically, loop, roll and throw around. It's even got bullet time..
It's very much like the Rogue Squadron games, except in a campy WWII setting (Demo has an American pilot flying a Hurricane and complaining about "stiff-*** Brits", and tossing challenges to rival German aces during duels).
The sound, of course, like most LEC productions, is quite good too.
