Empire. For the same reason Dante Hicks stated in clerks. By the time Jedi came out, Lucas had wrestled just enough control over the series to begin ruining it.

Jedi was still a solid movie, but as my friend said in Junior High: "The ewoks are cool when you're a little kid...but when you're older you realize they couldn't possibly have beaten all those soldiers (stormtroopers)."

The battle for Hoth is the best action/fighting scene in the series, IMO. So Empire.
