I think they just mash whole coconuts into a pulp, add sugar water, stuff it into a plastic tube and freeze it. Then they feed it to people.

Depending on the brand, it could be lemon, lemon-lime, tropical fruit/tooty fruity. Occasionally there's coconut, which is badass.
