What's your favorite type?

I just bought a bar of goat cheese from Costco and it tastes pretty good. I can't really eat lots of it because it makes me really thirsty.

But my favorite I'd say... would be Brie

Cheddar.
nope.

Mozzarella, I guess, because you can melt it on pizzas and burgers and that's the only time I can really stand cheese.

Oh! Or marscapone. Because marscapone cheesecake and icecream are the nicest things I've probably ever tasted.

I like many types of cheese. Today my favorite is provolone.

Provolone or monterey jack

Can't get much better than those. :D

I'm not sure what my favourite is, but Lancashire and gouda are awesome. I think I would have to taste a greater variety before calling anything my favourite.

I'm not too fond of cheese. >_> I can't just straight up eat it alone...it has to be on or in something...like pizza, a burger, a quesadilla, etc. Even then, I can't have too much cheese on those things.

If I had to pick a favorite, it would definitely be swiss. Ironically, I'm allergic to swiss cheese. A few bites and my whole mouth is swollen. :argh:

I like a lot of different cheeses: provolone, mozzarella, swiss, monterey jack, parmesan, romano, bleu, cheddar, etc. I would need to try more before actually deciding though.

Feta cheese on a nice Greek salad is hard to beat.

Brie is good, too.

Most people haven't had anywhere near enough cheeses to pick a favorite, I think. Myself included.

That said cheddar is always good.

Really sharp cheddar or Muenster.

I also like swiss on occasion.

I've always wanted to like cheeses that smell like feet, but I never can.

I bought a piece of Peti' Basque a few months ago, since it was my housemate's favorite cheese, but it was way too strong for either of us to finish it. It called to mind locker rooms rather than the green hills and dramatic cliffs of Basque country.

I recently bought a Danish fontina that was slightly too stinky for me to eat. Shame, because it had a nice texture.

Really mature Gouda. I actually usually eat pretty bland cheeses of low fat content (stuff that many gastronomes would hardly call cheeses at all), but every now and then I go and buy black label gouda.

I don't believe I've ever had Brie, What does it taste like?

My favorite is Swiss or Blue cheese. Blue cheese is expensive, though, so I don't usually eat it unless I want to indulge myself.

I used to like gouda a lot back in the 1990s but nowadays I mostly get cream cheese (as cheese, not spread).

Brie tastes and smells creamy and buttery, with a savory and an umami mouthfeel, and has an inoffensive odor. Its texture is soft but not runny, with a mild, edible rind. My mother would often wrap it in pastry dough and bake it for an appetizer when we had company.

Swiss and bleu cheeses refer to a variety of different cheeses.

Is that how it's spelled? "bleu"? I never really paid attention.

I just always bought the store brand O_o

As far as swiss, Smoked is the best in my mind, but just swiss in general is amazing.

It's interchangeable, as "bleu" is French for blue, and the process for creating those kind of cheeses was discovered in France.

An interesting cheese that I doubt anyone here has tried is halloumi. I doubt I would have ever heard of it if my friend wasn't dating a Cypriot. It's a salty cheese that looks similar to mozzarella, and doesn't melt, so you can grill or toast it until it turns brown. It has an interesting texture, and flakes almost like fish. It sometimes pops up in supermarkets, and can be found easily at Middle Eastern markets.

Growing up we had goats we milked to give the milk to orphaned calves.
My Mom, once every blue moon or so, would talk some milk and make cheese with it. It was almost like a cottage cheese spread, but crumbier (If that makes any sense) and white.
Without the seasonings it tasted like cheedar, but Mom usually put a mix of onions and garlic on it.

I would not recommend going to Paris, then. I remember when I was little, we passed an open-air cheese market near Montmartre, and I thought a large animal was rotting long before I even saw the market. I could barely stand it, and the vast majority of the stink was concentrated in these little round cheeses that looked like powdered donuts and smelled like decaying feet.

That's alright I don't plan on it sometime soon. But theres a pretty damn big cheese shop in Edinburgh that sells everything you want. The smell outside in Victoria Street is horrible.
nope.
