since my roommate grew up on a farm and I've seen him kill his chickens in a similar manner, I'm assuming they put the bird in the funnel thing which holds it steady and it's neck sticks out the end, then they cut the throat and let it bleed out, hence why the trough is coated in blood.

Yes, that is indeed how it is done. I live on a farm and we've done that for guinea fowl before. Thankfully I wasn't around when it was done. :gonk:

We used to raise chickens for meat and when the time came to kill them my father was the one to do it. Unfortunately he didn't like looking when he killed the bird, so he couldn't use an axe (not that we had one sharp enough anyway) in fear of getting his fingers as well as the bird. So instead he used a bread knife. :\
