Medium well.

I used to like my steaks medium well done, mostly because that was what the rest of the family had and I never thought to try anything else,

Now that I've spent 18 months living in geneva and eating out a lot in the area and over the border in france I have to say it's now either medium rare or just rare.

At most of the premium steakhouses round the US, they will laugh at you if you order anything above Medium. I usually like mine Medium Rare.

However at Brazillian BBQ, I usually enjoy getting most of my meats rare to perfection (although occasionally sometimes it's a bit too "moo", so they just give me another piece from the skewer)

When I cook it myself I tend to hit medium well, since I don't really have the equipment to get an even color. In order to get the center beyond raw I wind up getting grey/brown deeper than I'd like. I should try letting it warm up to room temperature beforehand.

Definitely getting me ready for the Ribeyes in the fridge.

I order them medium rare when I'm at a steak house or restaurant.

medium rare - medium well

Depends on the cut of meat. For something tough I'll braise it, which usually results in it being "well-done" but it's not ruined, it's rescued. I always broil tenderloin until medium-well done. If it's a barbecue kind of steak I prefer it medium- to medium-rare.

Just finished the ribeyes. Really nice medium. Awesome.

Warming to room temperature definitely helped. Awesome thread.

Here is my recipe for grilling meat.

Depending on the amount of meat, the amoung of ingredients may vary, it all depends on your own taste.

Well, in a blender I throw in the following ingredients.

Onion
Garlic
Magi Sauce
English Sauce
Salt and pepper
A little vegetable oil
Silantro
1-2 dark beers (lagers?)

Blend this well. Then put the meat in a plate and pour it on there. Put in the fridge for about 30 mins. The meat will absorb the majority of the mix and when you cook it on the grill you just put on one side, wait till a small puddle of blood forms on the top side, and flip it over. Wait till theres a puddle on that sde, and its done. The meat is done.
Nothing to see here, move along.

What the hell is English Sauce?
nope.

Brown sauce?

worchestershire sauce would be my guess.

The red juice leaking out of your steak isn't blood.

The red juice leaking out of mine certainly is, because I marinate my steaks in blood before eating them rare to raw.

Lagers are usually pretty light. You want stout, which is an ale.

English sauce probably means a brown sauce like HP Sauce.

Another pic. The color isn't quite right (looks darker IRL)- but I don't feel like going out to my truck to get my good camera. :P

that looks like a ****ING VAGINA

i always sear my steaks on a preheated cast iron skillet, then place in oven ~2-5 min depending on thickness, for perfect medium rare ecstasy. if the rub is good (which it always is oh yeah), no steak sauce required. only downside to searing is the fire alarm i guess. interestingly, whenever i eat steak, i always remember that scene from the matrix where cypher eats steak with agent smith without fail.

I've probably only eaten steak no more than 5 time..
Yea.. poultry is awesome ... pigs are better though.

I just don't like cows. the only time I actually enjoyed a steak was after 10 hours of physical labor setting up barbed wired fencing in eastern Montana. My body was just craving food so much I enjoyed it.

I enjoy game .. buffalo .. pretty much every meat but cows..

Good. More steak for me.

Seriously. Vegetarians piss me off. It took us millions of years to evolve into omnivores. We worked hard to become the most perfect predator on the planet. And those ****ers are just going to throw it away? Why don't you go live in trees, and get your protein by picking bugs off each other's backs.

I too more often than not prefer pig based products.

Unless its a braised steak that is. :D
nope.

i like my steak diced and put in a curry, yeah! what ya gonna do?
2009-05-09, 9:44 PM #67
Agree that that is probably delicious.

I'm not entirely convinced it's possible to cook steak such that it is not delicious.

Today I realized that I absolutely hate steaks if they're not between a bun, some cheese, some other stuff but mainly the point being that steaks suck if they're not part of a...

... it's not a steak then...
it's ground meat in a short cylinder form.

Then you just need bigger buns. A steak can ALWAYS become a hamburger.

Steak sauce should never touch a steak by the way. If the steak is prepared in any correct manner, steak sauce should never touch your plate.
