IIRC apostrophes are never used for pluralization. I may be wrong about this, but I know that I nuked that type of usage from my brain at some point during high school.

Just out of curiousity, why would it be LEGO Bricks (or Toys) as opposed to LEGO bricks (or toys)?

I'm pretty sure it should be LEGO bricks, just like you would buy Dasani water.

But yes, apostrophe is possessive, not plural.

Yeah, I'm lighthearted here too, if you didn't know. I understand the whole trademark-grammar issue. I just don't care and other than LEGO saying they want legos to be referred to as LEGO Bricks (or Toys) I don't know a proper reason that the B or T should be capitalized.

but Galaxy is the title of the car, that's why it's capitalized. If you wanted to make it comparable, it would be Ford Galaxy car.
