I've dreamed about doing this sort of thing in London, sort of did it on a much smaller scale out at CERN using a bunch of the old accelerator tunnels and access points to try to get from my office to the restaurant without ever going above ground...found some awesome places along the way.
Some of the old tube lines/stops in London would be amazing.
