Ok, so for whatever reason, I found myself drinking a bottle of horchata today. I was halfway through when I noticed the expiration date... Aug/19/11
Now the question is will I make it through the day without losing bowel control????

If I recall, the expiration date is for stores, telling them when to pull the product from the shelves. I don't believe that's when they "get bad".

The sell-by date, often confused with the expiration date, is the final date in which the stores can sell the product. It's apparently based on the assumption that the buyer will use the product within a "reasonable" amount of time. For instance, milk is good for like 1-2 weeks after said date. I don't know which system they use in other countries.
