Irish metal.... sick. Plus, if you're looking to be original, it's already been done.
BUT if you're going for a traditional irish sound out of a regular rock set up there's several ways.
Go barebones on the drum set. Low tom and high toms only, better off with hand-drums.
Drop the bass and have 2 acoustic guitars, or if you cant do acoustic, do clean with a bit of chorus and reverb on it.
Keyboards can double what an accordion would normally play.
Better suggestion on the drums, go buy an irish drum (bodhran) from your local music shop. They're about $60 I believe.
Better suggestion on the bass, learn harmonica, it's not that hard and you can get decent ones for about $15. D and C is all you'll really need.
I know it's not really what you asked but those are relatively cheap ways of getting an irish sound.
If you meant achieving an irish sound purely through music, listen to irish music. Learn how the songwriters use key changes and different voicings to work the flow of the song.
