"Shy" by Sonata Arctica is really good_. "Letter to Dana" also.

"Heaven" by Bryan Adams is a personal favourite of mine.

3) Miles Davis - Blue in Green. In a past relationship of mine, I considered this our unofficial "our song", because my favorite color is blue, and hers green, and it's just a lovely song. Luckily, when I listen to it, it doesn't remind me of her anymore.

2) Yoko Kanno - Goodnight Julia. In my opinion, this is the most beautiful piano and sax "duet" (not sure what you call an instrumental of two instruments, but duet seems to fit) I've ever heard. This is from an anime soundtrack (Cowboy Bebop), so if you have a prejudice against anime, don't let it affect your view of this song.
