Jim, take a look at this. Completely freeware and quite "realistic" (within the context and canon of the show, judging by the handful of episodes I've seen) fan-made Starfury sim.

The voice acting is a bit odd, but in general the production values are good. You can do the requisite starfury moves like sliding forwards while spinning your craft around to fire at the enemies behind you. Newtonian Physics are fuuun. Graphics and soundscapes are almost undistinguishable from the show.

It's occasionally quite unforgiving, and there's one part in the tutorial which is a bit tedious (mild spoiler: read backwards: noceab amixorP eht morf mk k059 si retnahcnE ehT).

Take a look. You might like it.
