Some night on your romantic getaway, go out some evening, have a great time, then slip the ring onto her finger when she's asleep. When she wakes up she'll freak and it would be awesome.

Of course that only works if she's a heavy sleeper and not liable to get up in the middle of the night, but I think it would be amazing if it worked.
