Recently I've been experimenting with other types of grain products to diversify my meals. Here are a few interesting ones

- Quinoa is a great rice alternative and can be used as a base for a cold salad
- Wheat berries are interestingly chewy
- Buckwheat (kasha) is good when cooked with zucchini and leaks or some similar combination
- Spelt ptitim. Their texture is fabulous
- Couscous is always fun and easy but I get bored with it real quick.

any other suggestions?

Teff is an Ethiopian grain that's very nutritious. It has a far higher concentration of various vitamins and minerals than other grains, is high in protein and has a better amino acid composition that pretty much any other grain (that I know of). Apparently it's really labor intensive to cultivate, though.
