I thought the first one was excellent. Surprisingly excellent. Maybe it appealed to me in particular because I'm a Monkey Island fan and generally like pirates.
The sequels were over-the-top fantasy fluff that happened to have some pirates. They had some good bits but mostly seemed like they tried way too hard.
On Stranger Tides, by the way, is the novel Ron Gilbert was reading when he came up with Monkey Island. It has some good potential, though I'm not sure how I feel about the insertion of Jack Sparrow into the story. There are some Dragonball Z-esque bits that grated on me, though.
