My wife gets mad because they measure ingredients like I do. Units include "a handful," "a little bit," "a lot," "a bunch," and "a little bit more."

That is 100% how you should cook.

Unless you are baking, then you have to weigh it. You have to ****ing weigh it and not do volume if you want to perfect anything.

My wife is not much of a cook. I enjoy cooking and like to think I do well. I mostly learned because I like to eat good food and she doesn't really prepare good food. She has a few dishes she makes well, but everything else is recipes from the back of the soup can. But she makes the best goddamned apple pie you'll ever have.

Also, it seems obvious, but better ingredients makes better food. Yeah, a potato is a potato, but peppers from this place are better, shallots from that place are better, the pork from there tends to be fresher, etc. It makes a big difference.

I like the almazan kitchen because the food is the main attraction. You never see any faces or hear any voices. It's about the food - and like spook said, the sound, the color really add to the experience. They cook primitively, outdoors, and it's amazing.

It's a kind of awkwardly fake 'primitive' cooking experience, though... at least in that above video.

Do they just take everything from the kitchen out to the woods and make a fire there? It's a little more primitive than just cooking on a grill on the back patio?

That video isn't the best example. I guess "primitive" isn't the best word, as they still use knives and cast iron. "Simply" is probably a better term. They don't have a huge kitchen with stainless steel bowls and big mixers and a dozen knives and special equipment. It's just a couple of wooden bowls, one knife, an open log fire, and they usually cut on a smooth log and cook on a flat stone.

Tortillas are surprisingly easy to make. I add a little bit of miel and a small glob of manteca to mine. I'm really bad at getting them to be round, though :saddowns:

Gotta find yourself a tortilla press my man, I was a prep cook at a mexican fine dining restaruant (before I even know I was vaguely mexican) and I used to churn out purfectly round tortillas for many a half stoned shift. I even made Robert Duvall some tortillas once

I really should. I usually just use a wooden cutting board and a glass plate and press on it. My kitchen is really small so I don't have room for much, but I'm moving in a few weeks and will probably get one then. Or maybe make one, they're very simple.

I don't like corn tortillas unless they're fried, but a tortilla press would find a lot of uses at my house. In addition to tortillas, it could be used to make naan and mini-pizza crusts as well.
