I listen to almost anything but as far as classical goes,

I listen to Nobuo Uematsu the most but,

Motzart's string stuff is great but other wise I think he is abit over rated.
Beehtovan is excelent
Bach is good too

on my list to hear more of is Rachmaninov and Meendelsohnn

(SP) for all of them why are their names so dang hard to spell

as far as modern composers go.

Yasinori Mitsuada (SP) had some good stuff
John Williams of course but I don't know that he is as great as many make him out to be, alot of his stuff sounds the same.
I enjoyed Andrew Lloyd Webber's stuff for The Phantom of the Opera also
(crappy movie, dumb story, I imagine the play wasn't much better, but good music)

I even sing classical music! I'm more into classical choral music then orchestral (though there are more than a few exceptions to that rule)
